Recipe: Royal Icing

This is the icing recipe we use to ice cookies. This recipe is enough to fill two Foodini capsules. 

Ingredients
  1. 1/4  cup of pasteurized egg whites
  2. 1/4 teaspoon of water
  3. 4 cups of confectioners sugar
Preparation
Add all ingredients to a bowl, stir slowly until it is incorporated together, then use a mixer at high speed until the icing is perfectly combined. 

Add food coloring if you like. We prefer to use concentrated food coloring as it only requires a very small amount to create vivid colors. 



Tip if you are using multiple capsules for your print
To keep the icing in the capsule tips from hardening (due to contact with air) when the capsule isn't in use printing, try putting sponges in the tray. The nozzle should barely be touching the sponge, just enough to keep the air out of the nozzle tip. Try doing this with a dry sponge or slightly damp sponge - depending on your ingredient.
